One thing I found helpful when I first started trying to learn this...
If you use a thumb and forefinger grip, imagine a little triangle formed by the side of your pick, the fleshy part of your thumb that faces the guitar, and an imaginary line between the tip of your pick and an opposite point on that fleshy part of the thumb. You basically have to rub the string with that imaginary line when you pick to get a pinch harmonic - it's bouncing off the pick and hitting the thumb. If you make an equilateral triangle it's easiest.

great diagram...its very hard to explain...i found it on accident many years ago....almost every note i play has some level of artificial(pinch) harmonics
